Homemade Instant Pot Yogurt
Start to finish: Active: 5 minutes | Inactive: 8 hours, plus time to chill overnight
Makes: 6 cups
Ingredients
½ gallon whole milk
2 tablespoons yogurt starter (or plain, unsweetened yogurt labeled with “live active cultures”)
Method
Add milk to the inner pot of an Instant Pot. Select the “Yogurt” function, and then adjust to “Boil” to fully heat the milk to 180 F. Allow the milk to cool to 110–115 F (about 1 hour). Use a spoon to skim off the skin that develops on the surface. Discard it and whisk in the yogurt starter.
Incubate the yogurt by selecting the “Yogurt” function and adjusting the time to 8 hours. Once the cycle completes, transfer the inner pot to the refrigerator to chill overnight. Avoid stirring to preserve a thicker consistency. The following morning, transfer to individual containers and enjoy. Keep your Instant Pot yogurt refrigerated and eat within 2 weeks.
Notes: Yogurt starter, like sourdough starter, can be reserved from a previous batch of yogurt.
