Mini Hash Brown Quiche Cups 
Start to finish: 45 minutes

Ingredients
12-ounce bag shredded hash browns, thawed
3 tablespoons butter, melted
3 strips bacon
¼ cup onions, diced
¼ cup bell peppers, diced
¼ cup tomatoes, diced
¼ cup Gruyere cheese, shredded
3 eggs
1 cup whole milk
Salt and pepper, to taste 

Method
Heat oven to 425 F. Place thawed hash browns in a thin kitchen towel and squeeze to drain liquid.

Liberally brush the bottoms and sides of a jumbo muffin tin with melted butter. Divide hash browns among prepared muffin tins and press firmly into pan with the bottom of a small jar or glass. Pour any remaining butter onto the bottoms of the hash browns.

Sprinkle with salt before baking 10–15 minutes, or until hash browns are golden brown. Remove from oven and lower temperature to 350 F.

Meanwhile, cook bacon in a skillet until crispy. Remove to a paper towel-lined plate to drain before crumbling into a bowl and setting aside.

Cook onions and peppers in 2 tablespoons of the bacon drippings until soft, about 5–7 minutes. Remove and place in bowl with bacon and add in tomatoes before mixing. Divide mixture evenly among baked hash brown crusts and top with Gruyere cheese.

In a glass measuring cup, whisk together eggs and milk until smooth. Season with salt and pepper.

Pour custard mixture into crusts, nearly all the way to the top. Carefully transfer to oven and bake 8–10 minutes, or until centers are just barely set.

Serve immediately.

To store or for a make-ahead meal: Cool mini hash brown quiche cups to room temperature, wrap in plastic wrap and store in refrigerator. Quiche cups can be reheated in a microwave for 30–60 seconds or for 10 minutes in a 350 F oven before serving.
