Pre-prepared, protein-packed breakfast sandwiches that everyone in your family can customize and re-heat individually mean you can serve a filling, nutritious breakfast in just a few minutes (not to mention the first round of prep time — only 30 minutes!). Talk about a time-saving meal!

While we love an even layer of scrambled egg in this recipe, this breakfast sammie recipe also works with eggs cooked other ways: experiment with fried or poached eggs for some added variety.

Start to finish: 30 minutes

Ingredients
4 eggs
½ cup whole milk
Salt and pepper, to taste
Bread, English muffins, bagels or croissants, for serving
Sliced cheese of choice, for serving
Prepared breakfast meats, such as bacon, sausage or ham, for serving
Fruit spreads, such as strawberry jam or grape jelly, for serving

Method
Preheat oven to 350 F.

Line an 8-by-8-inch baking dish with parchment paper and spray liberally with baking spray, set aside.

Whisk together the eggs, milk, salt and pepper until smooth. Pour into prepared pan and bake for 12–15 minutes, or until center is set (edges will puff up while baking, but level out once cooled). When eggs are cool, cut into 6 equal pieces for sandwiches.

To assemble sandwiches:
Layer prepared egg, selected cheeses, meats and/or jams on desired bread. Enjoy immediately, or wrap in parchment paper, then tinfoil and store in the fridge for breakfast all week.

  • Croissant, sharp cheddar and grape jelly

  • Sourdough, provolone and bacon

  • Whole wheat English muffin, American cheese, ham and strawberry jam

  • Everything bagel, pepper jack cheese and bacon

To reheat sandwiches:

In the oven: Preheat oven to 350 F and place wrapped sandwich on center rack for 10–15 minutes, or until warmed through.

In the microwave: Remove tinfoil from sandwich and microwave for 45–60 seconds, or until warmed through.
