The only thing better than enjoying this Italian-inspired sausage and pepper sandwich hot and fresh is enjoying it as leftovers for a quick meal the next day (and the day after that). Just reheat your filling, toast up a sandwich roll and you will have delicious sausage and pepper sandwiches ready in minutes.

Sausage and Pepper Sandwiches

Ingredients
3 tablespoons salted butter, divided
4 sub sandwich rolls, sliced lengthwise
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
4 Italian sausage links
1 1/2 cups tomato sauce
8 slices provolone
8 slices mozzarella cheese
Method
Heat oven to 350 F.
Spread a thin layer of butter on the rolls and toast in a dry skillet over medium heat until golden brown. Set aside to cool.
In the same skillet, add 2 tablespoons butter and sliced bell peppers. Sprinkle with kosher salt and cook, stirring occasionally, until peppers are tender, about 7 minutes. Remove from pan and increase heat to medium-high.
Add sausage links, searing well on all sides.Reduce heat to medium-low and pour tomato sauce over sausage links. Cover and cook 10 minutes, or until sausage links are cooked through.
Add cooked sausage links into the toasted buns, topping with bell peppers and 2 slices of each cheese.
Bake sandwiches in preheated oven 8–10 minutes, or until cheese is thoroughly melted.
Serve subs with extra tomato sauce for dipping, and a sprinkle of red pepper flakes and Parmesan cheese, if desired.
